5 Easy and Delicious Recipes to Make for Lunch When You’re WFH

Three years ago, a list of work-from-home lunch recipes might have appealed to a small audience of remote employees and freelancers. These days, it applies to a much larger chunk of the workforce. Data released by the U.S. Census Bureau in September 2022 revealed that the number of people working primarily from home tripled between 2019 and 2021 (from 5.7% to 17.9% of the total workforce)—and that’s not even counting those who work primarily in an office but have regular remote work days.

The pros and cons of remote work are many, but I think it’s fair to say that taking Zoom calls in sweatpants, being in the same room as your pet(s), and having access to your own kitchen for lunch are among the biggest benefits. It means not needing to spend $12-plus on takeout or figure out something to pack the night before. It means you have your entire kitchen at your disposal. And it means no more sad desk lunch.

Of course, with great power (to make whatever you want) comes great responsibility (to actually decide what that is, and have the ingredients). And, because decision fatigue is real, it’s all too easy to eat the same few meals on repeat, bored, but not sure what else to try.

That’s where these five easy work-from-home lunches come in. They’re mostly standards like salads and sandwiches, but they’re more interesting than just turkey and cheddar on wheat, or a bagged salad mix tossed with some dressing  in a big bowl. Find one or two to add to your rotation next week, and notice how much more excited you get for that midday meal.

Cooking chickpeas in an air fryer takes just 12 minutes and gets them extra-crispy, but you can also get a similar result in the oven in a little over twice the amount of time.
